May - Olives

After a busy Saturday serving customers at Mt Stirling Olives, here's Jim Miller's simple recipe for a warming pasta supper featuring olives - of course!

Ingredients

  • I packet spaghetti
  • 40 Mt Stirling Olives sun dried olives
  • 1 small punnet of semi-dried tomatoes
  • 1/3 cup Garlic Infused Olive Oil* (or 5 cloves of crushed roast garlic with 1/3 cup olive oil)
  • Large handful of fresh basil
  • 6-8 tablespoons of shaved parmesan cheese
  • Salt and pepper to taste
 

Method

  • Pit the olives and chop roughly.
  • Roughly chop the basil and semi dried tomatoes.
  • Combine all three with the Olive Oil.*
  • Add salt and pepper to taste.
  • Cook pasta al dente. 
  • Combine with other ingredients then serve topped with shaved parmesan cheese.
