After a busy Saturday serving customers at Mt Stirling Olives, here's Jim Miller's simple recipe for a warming pasta supper featuring olives - of course!
Ingredients
I packet spaghetti
40 Mt Stirling Olives sun dried olives
1 small punnet of semi-dried tomatoes
1/3 cup Garlic Infused Olive Oil* (or 5 cloves of crushed roast garlic with 1/3 cup olive oil)
Large handful of fresh basil
6-8 tablespoons of shaved parmesan cheese
Salt and pepper to taste
Method
Pit the olives and chop roughly.
Roughly chop the basil and semi dried tomatoes.
Combine all three with the Olive Oil.*
Add salt and pepper to taste.
Cook pasta al dente.
Combine with other ingredients then serve topped with shaved parmesan cheese.
