March - Apples

This recipe provided by Roz Sutton to accompany the Nude Food calendar's March theme of apples.  These and other fabulous apple treats form the changing menu at Sutton's Juice Factory, Cidery and Shed Cafe. The winning apple photo in the calendar was taken by Jo Maclellan

Sutton’s  Apple Muffins

Ingredients:
125gm melted butter
½ cup sugar
1 egg
¾ cup milk
1 ½ cups plain flour
1 tblsp baking powder
½ tsp cinnamon
2 cups peeled & diced granny smith apples from Sutton’s (I use 2 apples)

Topping:
¼ cup finely chopped pecan nuts
¼ cup brown sugar
½ tsp cinnamon
 
Method:
Preheat oven to 200°C. 
In a large bowl combine melted butter, sugar, beaten egg & milk. Sift in flour, baking powder, apple & cinnamon. Stir gently until just combined. The mixture should be lumpy, not smooth.
Spoon mixture into muffin tins until 2/3 full. Combine topping ingredients & sprinkle over muffins. Bake 15-20 minutes until lightly browned. Makes 12.
