Sutton’s Apple Muffins
Ingredients:
125gm melted butter
½ cup sugar
1 egg
¾ cup milk
1 ½ cups plain flour
1 tblsp baking powder
½ tsp cinnamon
2 cups peeled & diced granny smith apples from Sutton’s (I use 2 apples)
Topping:
¼ cup finely chopped pecan nuts
¼ cup brown sugar
½ tsp cinnamon
Method:
Preheat oven to 200°C.
In a large bowl combine melted butter, sugar, beaten egg & milk. Sift in flour, baking powder, apple & cinnamon. Stir gently until just combined. The mixture should be lumpy, not smooth.
Spoon mixture into muffin tins until 2/3 full. Combine topping ingredients & sprinkle over muffins. Bake 15-20 minutes until lightly browned. Makes 12.
