August - Mushrooms

This recipe provided by Kath Ives to accompany the Nude Food calendar's August theme of mushrooms.  The winning mushroom photo in the calendar was taken by Sue Moore.

Garlic Mushrooms

  1. Prepare dressing (see below)
  2. Wipe mushrooms to clean (never ever wash under water!)
  3. Grill whole mushrooms on griddle pan until tender- approximately 12 mushrooms per serve
  4. Pour dressing over just grilled mushrooms and let marinate over night

Dressing per serve:

  • 1 tablespoon good extra virgin olive oil
  • juice of one small lemon freshly squeezed
  • 4 cloves elephant garlic smashed
  • pinch salt

Serve cold with fresh ricotta and a toasted French baguette for brunch (oh and a glass of Granite belt sparkling wine!)
